Mr Birrell entered his bratwurst into the Australian Meat Industry Council's state Sausage King competition - an annual competition that pits snag against snag, burger against burger.
''It's just a bratwurst-style sausage, a mix of beef, pork and spices,'' Mr Birrell, of Nigel's Gourmet on the Tamar, said.
The butcher will now take his banger to the national final, to be held in Perth next year.
''I entered these competitions for the first time last year, and came second in the gourmet sausage and won the best Tasmanian burger,'' Mr Birrell said.
''I've been a butcher for 20 years and I think in the last two years I've really tried out some different things.
''I really like to see how far I can push a sausage . . . I've done flavour combos like lamb and mint chocolate, which was pretty all right, Thai green curry chicken and prawn, which got the second place last year, curry chicken and scallop, pork and truffle, and a vegemite and cheese sausage special for Australia day.''
